La Petite Maison's Cocktail – A Recipe

WThis is a home-style version of a cocktail found on the seasonal cocktail list. It's a large-volume pre-mixed which is loaded with essence of a Christmas time, which makes it ideal for a festive gathering. Reserve the remaining cordial to use in brunch beverages, puddings, or for another batch of the drink.

The Bikini Cocktail

Makes enough for 10 servings

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Premix (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

For the Syrup: Put all the components into a pan, bring to a gentle boil, mixing until the sugar dissolves. Then, remove from the stove and let it to cool down completely. Pour to a clean bottle, seal keeping it in the fridge, it can be stored for around a month.

Preparing the Premix: Mix all the liquids into one large bottle, allow it to infuse for one hour, then pass it through preferably using muslin, so it's completely strained.

For serving: Measure 85ml of your cocktail base into your stirring glass packed with ice, and agitate lightly for a minute until cold. Pour to a cold coupe glass or equivalent, top with the cranberries and finish by giving it a light spray with the mandarin essence above the glass.
